Squish

I had some yummy squash last week, which inspired me to make a squash casserole last night. It turned out well. I took a picture but in the pic, it looked gross. I don't want that to dissuade anyone, so I'll just share the recipe:

  • 2 eggs
  • 1/2-cup fat-free plain yogurt
  • 1/2-cup fat-free cottage cheese
  • 1/2-cup fat-free shredded cheese of your choice
  • 1/4-teaspoon dried thyme
  • 3 cups squash (roughly 3 squash sliced)
  • Salt & freshly-ground black pepper to taste

Beat the eggs. Mix the yogurt, cottage cheese, shredded cheese, and thyme with the beaten eggs. Coat a baking dish with non-stick spray. Add 1/3 of the squash in a layer in the baking dish. Top it with 1/3 of the cheese mixture. Sprinkle on salt and freshly-ground black pepper. Continue until you've used all your ingredients. Top with extra shredded cheese. Cover and bake it at 350° for 25 minutes. Uncover it and bake it until the cheese is melted and bubbly.

YUM-EE and very low in fat.
